Mati Foods is an Estonian food technology startup developing clean-label, minimally processed plant-based meat and seafood alternatives using mycoprotein. By utilizing biomass fermentation, the company processes the root-like structure of fungi into whole-cut alternative structures. Their current product line includes cholesterol-free, nutrient-rich products branded as Chickenless Fillets and Fishless Fillets. In February 2023, the startup successfully closed a crowdfunding round on the Fundwise platform, raising 149,280 EUR which represented 136 percent of their original target.
